Freshness is an operating decision.
Our future locations are designed around small modular pastry labs so production can happen close to the customer. That makes it easier to bake and finish products according to local demand instead of forcing every location to carry the same production mix.
Why local menus matter.
London communities behave differently. A product that performs well near a busy commuter hub may be less popular in a neighbourhood location, while tourist-facing locations may have different preferences. We want the data to tell us what is working.
Modern pastry gives us room to experiment.
ANDREA can work across viennoiserie, cakes, tarts, cookies, desserts and seasonal creations. Some products become signatures. Others are limited drops. Some are simply tests.
